Abstract: Kepulauan Meranti Regency, one of the largest sago producers in Indonesia, has significant potential to develop sago derivative products, one of which is analog rice as a local food alternative. Given the high rice consumption in Indonesia, the use of sago-based analog rice can reduce dependence on imported rice and support national food security. This program aims to enhance the skills of the community and SMEs in producing sago-based analog rice using a new rice molding machine, along with product marketing strategies. The results show that the use of the rice molding machine improves the efficiency and consistency of the product, providing positive impacts on food security and the local economy. Additionally, this analog rice product can be a solution to reduce environmental pollution caused by unprocessed sago waste. This program is expected to be sustainable and provide long-term benefits to the local community.
